This is everyone's go to cookie, which is why its important to get it right. There are hundred of different variants of this seemingly simple cookie that it almost seems like an equation. Some use more brown sugar than white, others put cornstarch to make them softer, but no matter what you do the most important part is the rich caramel flavor. Now to achieve this one would brown the butter before making the cookie. This technique makes the best cookies, but its impossible to do it with vegan butter. You see the browning comes from the bits of milk solids that cook, and since vegan butter has no milk you just can't do it. Don't worry because there is a solution.
These soft and chewy cookies have a special ingredient that comes from the mediterranean that makes them a perfect blend of nutty and sweet. I'm talking about tahini. For those of you who don't know, tahini is sesame paste that is traditionally used in dishes such as hummus and baba ghanoush, but in this recipe it adds a nutty, caramelized flavor that you just can't get with vegan butter.
